Strawberry Cream Cheese Santas
I’ve been making these cute little Strawberry Cream Cheese Santas for years and I wanted to post a quick how-to.
You’ll need fresh strawberries, 1 large can of pineapple chunks, mini chocolate chips, and long toothpicks. It’s a good idea to get an extra can of pineapple because some of the pieces can be oddly shaped.
You will also need 8 oz of cream cheese and 1/2 cup marshmallow cream (recipe to follow).
Wash and drain the strawberries and thoroughly drain the pineapple on paper towels.
Cut the top off the strawberry, and then cut about a third off the bottom. You will then flip them over and the bottom of the strawberry will actually be the hat. This will be more clear in the next couple of photos.
This is how they look when you flip them over. I blotted the strawberries and pineapple multiple times on paper towels because they can get slippery and hard to work with.
Poke holes into each pineapple wedge with a toothpick, then place a mini chocolate chip (pointy side down) into each hole for the eyes.
Place the pineapple wedge on top of the strawberry and add the hat.
Push a toothpick through the layers to hold them in place. They will look a little forlorn at this point.
Beat the cream cheese and marshmallow cream together until fluffy.
I used a small star tip to pipe the cream cheese mixture onto the strawberries. This is a Wilton #14, but any small star tip will do.
Pipe the cream cheese mixture around the hat, around his face for the beard, and on the back of his head for the hair. This guy looked a little Amish without a mustache, so I added one later.
I piped around the toothpick on the top of the strawberry to make a pom pom for his hat. I trimmed the toothpicks with scissors, and placed each little Santa in a mini baking cup. Then I chilled them for about an hour.
What I think is so cute about these guys is how adorably imperfect they are.

- 15 -20 large fresh strawberries

- 1 8 oz block cream cheese softened
- 1/2 cup marshmallow cream
- long toothpicks
Instructions
- Wash and drain the strawberries and thoroughly drain the pineapple on paper towels.
- Cut the top off the strawberry and then cut about a third off the bottom.
- Flip them over and the bottom tip of the strawberry will be the hat. Set aside.
- Poke two holes into each pineapple wedge with a toothpick.
- Place a mini chocolate chip (pointy side down) into each hole for the eyes.
- Place the pineapple wedge on top of the strawberry and top it with the hat.
- Push a toothpick through the layers to hold them in place.
- Beat the cream cheese and marshmallow cream together until fluffy.
- Pipe the cream cheese mixture around the hat, around the face for the beard, and on the back of the head for the hair.
- Pipe around the toothpick on the top of the strawberry to make a pom pom for the hat.
- Trim the toothpicks with scissors if needed.
- Place each Santa in a mini baking cup.
- Chill for an hour.
