Banana Cake with Chocolate Almond Streusel

This Banana Cake with Chocolate Almond Streusel is one of my favorites. The cake alone is already wonderful, but the brown sugar, semisweet chocolate and almond streusel topping takes it to a new level.
I found this recipe in Ina Garten’s Make it Ahead Cookbook. It is easy to make and would be great for dessert or even for breakfast. And perfect for company.

After mixing the cake ingredients (recipe below), pour batter into a parchment-lined 8″ square baking dish, top with the streusel, and bake at 350° for 35-40 minutes.

After baking, the almond streusel will be a light golden brown, the chocolate will be nicely melted, and the almonds crunchy and toasty.

The streusel topping provides a lovely contrast with the rich, tender crumb of this delicious cake.

Banana Cake with Chocolate Almond Streusel
Ingredients
- 4 oz (1 stick) butter
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla
- 3-4 ripe bananas, mashed
- 1/4 cup sour cream
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp kosher salt
Streusel Topping
- 3/4 cup brown sugar, lightly packed
- 1/2 cup cup all-purpose flour
- 2 tbsp butter
- 6 oz semisweet chocolate, chopped
- 3 tbsp almonds, blanched or sliced (pecans can be substituted if desired)
Instructions
- Preheat oven to 350°. Line an 8" square pan with parchment paper and set aside.
- Cream the butter and sugar with an electric mixer until light and fluffy, about 3 minutes.
- Beat eggs, vanilla, bananas, and sour cream on low until blended. (It will probably look curdled but that's fine.)
- In a small bowl, whisk dry ingredients together.
- With mixer on low, slowly add the dry ingredients to the banana mixture. Mix just until blended.
- Pour into prepared pan.
Streusel
- Combine brown sugar, flour, and butter in a medium bowl and mix with fingers until crumbly. Add in chocolate.
- Sprinkle streusel evenly over cake batter and top with almonds.
- Bake for 35-40 minutes until toothpick comes out clean.
