Strawberry Cream Cheese Santas

These cute little Santas are made with strawberries, pineapple, and mini chocolate chips and embellished with cream cheese and marshmallow cream.
Serves: About 20
  • 15 -20 large fresh strawberries
  • 1 large can pineapple chunks
  • handful mini chocolate chips
  • 1 8 oz block cream cheese, softened
  • ½ cup marshmallow cream
  • long toothpicks
  1. Wash and drain the strawberries and thoroughly drain the pineapple on paper towels.
  2. Cut the top off the strawberry and then cut about a third off the bottom.
  3. Flip them over and the bottom tip of the strawberry will be the hat. Set aside.
  4. Poke two holes into each pineapple wedge with a toothpick.
  5. Place a mini chocolate chip (pointy side down) into each hole for the eyes.
  6. Place the pineapple wedge on top of the strawberry and top it with the hat.
  7. Push a toothpick through the layers to hold them in place.
  8. Beat the cream cheese and marshmallow cream together until fluffy.
  9. Pipe the cream cheese mixture around the hat, around the face for the beard, and on the back of the head for the hair.
  10. Pipe around the toothpick on the top of the strawberry to make a pom pom for the hat.
  11. Trim the toothpicks with scissors if needed.
  12. Place each Santa in a mini baking cup.
  13. Chill for an hour.
