This a deliciously fragrant and rich cake with hints of lemon and vanilla. It is made with almond flour, which gives it the bonus of being gluten-free.

Serves: 8-10 slices
  • 6 large eggs
  • 1¼ cups granulated sugar
  • 1 tablespoon lemon or orange zest (I used a Meyer lemon)
  • 1 teaspoon vanilla (or almond extract if you'd prefer)
  • 2½ cups almond flour
  • ½ teaspoon kosher salt
  1. Preheat oven to 350°
  2. Line an 8 inch cake pan with parchment paper.
  3. Whisk eggs and sugar together in a large bowl. Add lemon zest and vanilla.
  4. Add almond flour and salt and whisk until well combined.
  5. Pour batter into pan and bake for about 30-35 minutes.
  6. Allow to cool in pan for about 15 minutes, then remove and cool on a wire rack.
  7. Dust generously with confectioners sugar.
  8. Serve with fresh fruit or dulce de Leche, if desired.
