Sweet and Salty Potato Chip Cookies

This is an easy recipe that combines sweet, salty, buttery, and crunchy with potato chips as the surprise ingredient.
Serves: 28 cookies
  • 3 sticks butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 3 cups flour
  • 1½ cups crushed potato chips
  • powdered sugar for sprinkling
  1. Place potato chips in a ziplock bag. Crush with a rolling pin. Set aside.
  2. Cream butter and sugar together with an electric mixer on high for 2 minutes.
  3. Add egg and vanilla and beat on medium for 1 minute.
  4. Add flour and beat on low just until blended.
  5. Stir in crushed potato chips. Mix on low or by hand just until incorporated.
  6. Scoop dough with a medium scoop onto a parchment-lined cookie sheet.
  7. Bake at 350° for about 10 minutes, or until edges are golden brown.
  8. Cool on rack.
  9. These cookies are best if eaten within 24 hours.
