Slow Cooked Moroccan Chicken Stew

This slow cooked stew is wonderfully fragrant, and made with fresh, healthy ingredients and a fabulous blend of warm spices.

Ingredients
  • 1½ - 2 pounds boneless, skinless chicken breasts, cut into pieces
  • 1½ cups chicken broth
  • 12-15 dates, chopped
  • 4-6 potatoes, quartered (I used smallish Yukon Gold potatoes and left the skins on)
  • ½ onion, chopped
  • 2 stalks celery, chopped
  • 3 bay leaves
Spices:
  • 1 tsp ginger
  • 1 tsp paprika
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • ½ tsp coriander
  • ½ tsp pepper
Instructions
  1. Add all ingredients to slow cooker and stir together.
  2. Cook on low for about 6 hours.
  3. Add additional chicken broth if needed.
  4. Serve over couscous, orzo, farro, quinoa, or by itself.
